Back in 2012, I have started taking gluten and dairy out of my diet. Ever since then I am having some trouble finding easy and simple recipes to try. At times, it is hard to find some of the ingredients listed, but most of the time it just does not come out tasty at all. I am not particularly a master chef, but I can definitely cook. So to change things up, I decided to use normal recipes and substituting the ingredients to be dairy free, gluten free and vegan. Here is my first try at the “Banana Bread” using Betty Crocker’s recipe. You can find the original recipe HERE.


1            cup brown sugar

½           cup margarine, softened

1 jar       apple pure (I used the one you give to children)

2            mashed very ripe bananas

½           cup rice milk

1            teaspoon vanilla

2 ½        cups rice flour

1            teaspoon baking soda

1            teaspoon salt

½           cup raisins, if desired


  • Heat oven to 350°F or 200C.
  • Mix sugar and margarine in large bowl. Stir in apple pure until well blended. Add bananas, rice milk and vanilla. Beat until smooth. Stir in flour, baking soda and salt just until moistened. Stir in raisins. Pour into pans.
  • Bake about 1 hour or until toothpick inserted in center comes out clean. Cool 10 minutes.
