While it’s raining outside, more like drizzling, I have decided it was a good day to get back to my baking roots. Debating between chocolate chip cookies and something healthy, I went with something healthy.

After doing a little research online, I finally found what I was looking for… La Cecina or chickpea bread.

Ingredients are simple:

1 pound chickpea flour

6 cups of cold filtered water

5 TB Extra Virgin Olive Oil

1 TB Celtic Sea Salt

2 tsp minced toasted onion

1 tsp minced toasted garlic

Directions are even simpler: 

Mix together everything except 2 TB of the oil.

Make sure no lumps are left. 

Let it rest for 1 hour.

Add 2TB of the oil into 14 inch pan and pour the batter slowly to let it float in the oil. Warm up the oven till 450 degree and bake about 30-40 minutes or till golden brown.

Eat while it’s fresh
