When in Italy… travel, try and see everything Italy has to offer… I promise you that you will never be disappointed. This time around I went to see how they make this wonderful cheese they call parmigiano-reggiano. As always, I was impressed, learned a ton and took numerous photos!

Few facts I learned:

Parmigiano-Reggiano is a hard granular cheese produced mainly in Emilia-Romagna. It is made from skimmed evening milking and whole morning milking. Salt is the only additive that is allowed. It is on average aged for 2 years. The name is protected under European protected designation of origin law.
